Dublin Coddle

Place the onions, apples, bacon, sausages, and potatoes in a saucepan and mix together. Season to taste and add 1tbsp of parsley. Add about 1 1/2cups/ 3/4pt/420ml of water and bring to the boil, then cover and leave to simmer for 60-90 minutes until the water has evaporated. Sprinkle with the remaining parsley and serve.
