Garlic Soup

4oz olive oil 100g or 1tbsp lard
4oz cured ham 100g
4oz one day-old bread in slices 100g
1tbsp sweet paprika
3 cloves garlic
6 eggs
4cups water 2pt/1.12l

Heat the oil and add the not-too-thinly sliced garlic. Before the garlic has turned brown, add the cubes of ham and the slices of bread. Let it cook for a few minutes, then add the paprika, followed by the water and salt.

Bring to boil and serve with the poached eggs.
