Season the beef and roast in a fierce oven for 10 minutes, to seal the surface. Reduce the heat to 180C, gas mark 4, 350F and roast for a further 1 3/4 hours, basting occasionally.
Rest the meat for 20 minutes before slicing and serve with roast potatoes and seasonal vegetables.
