Ultimate Cheese Toast

Our version of the ultimate cheese toastie: two slices of bread, slathered in our smoky garlic mayonnaise, then stuffed to the brim with cheese and our ale chutney, and finished in rosemary butter.

Makes one sandwich

Method:
Spread the slices of bread with the smoky garlic mayonnaise.

Heat up a frying pan, and drop a knob of butter in. Let it melt, and as it starts to foam, add in the chopped rosemary. Move around to coat in butter, lower the heat, then put the slices of bread, mayonnaise side down.

Spread a teaspoon of ale chutney on the top of each slice of bread, then sprinkle the cheese on top. As the bread starts to crisp, flip one slice on to the other to create a sandwich.

Continue to press down and flip the sandwich to crisp up both sides, and ensure the cheese melts. When it's golden brown, take out of the pan, slice in half and serve.

2 tsp Manfood Ale Chutney
60g grated four cheese mix
2 x 10g knobs of butter
1 sprig of rosemary finely chopped

Farmhouse Breakfast with Moorside Beef

I just had a beef craving and put one of our beef burgers and our beef sausages with my breakfast! Egg is fried in the centre of the slice of sourdough.

Ingredients
Moorside Hereford grass-fed beef burger and sausage.
Slice of sourdough bread.
Egg, local free range.
Bacon, dry cured.
Anything else you crave for!
Cooking lipid is as your choice.

Smoky stuffed aubergines

For our last Veganuary 2021 recipe, I've showcased a stuffed aubergine recipe. This is a great plant based recipe, perfect either as a starter or main course.

In the picture, we served it with a selection of dips, as well as pitta bread, olives and a cous cous salad. The smokiness from the tomato sauce, plus the heat from the chilli sauce, work really well together.

Boadicea Valentine's Martini

Chill a cocktail glass.
Add ingredients and stir.
Garnish with a strawberry.
If you prefer, stir the ingredients in a cocktail shaker filled with ice and strain into the chilled glass. Cheers!

12ml Mancino Vermouth
50ml Cranberry Juice
Add 1 strawberry to garnish

Citrus Herbal Collins

Shake all the ingredients except the soda. Double strain over ice cubes into a Highball glass. Top up with club soda and garnish with lemongrass and a lime wheel.

25ml fresh lime juice
25ml citrus cordial
80ml club soda
