Roast Jamaican Jerk Grouse with Caribbean Coleslaw

This unique recipe is a really great way to cook grouse if you are a little concerned about the gamey meat - the strong Caribbean flavours compliment the grouse perfectly.

For the Grouse:
1 Medium Onion, finely chopped
1/2 cup Spring Onions, finely chopped
1 Hot Pepper, finely chopped
3 tbsp Soy Sauce
1 tbsp Oil
1 tbsp Cider Vinegar (or white vinegar)
