Bakery means independent bakeries, grain water or wind mill or perhaps pie or cake maker. It has been brilliant to see a resurgence of independent bakeries over the last 20 years with the growing interest in real bread and sourdough. Some bread lovers who had to give up as they were getting symptoms of gluten intolerance have found they could switch to sourdough where the dough has been fermented to break down some of heavy carbohydrates. Other simply love the better taste and supporting their local business.
