Ex-dairy steaks are not only helping the dairy industry but are keeping sustainability in mind too. Once the milking cows stop producing milk they are put to pasture for a minimum of 12 months, these animals are a minimum of 5 years old and produce a rich depth to the flavour. We always serve these steaks up medium-rare and with a nice salad to cut through the buttery fat.
