Our rindless Gloucester Old Spot pork belly is prepared by hand and then cured with salt, pepper, nutmeg, thyme, raw sugar, fresh garlic, bay leaves and juniper for four weeks. It’s lightly washed and then hung for 24 hours.
This is a piece for you to slice or chop into lardons at home.
