Hot Smoked Trout Fillet - Natural Undyed 1Kg in 3 twin Vacuum Packs
Our Trout are sourced from Belleau Bridge Trout farm. Fed from the fast flowing Chalkstream in the South Loncolnshire Wolds this family run business supplies a number of leading restaurants around the country. We receive the fish fresh twice weekly for our customers across the UK. We fillet and cure the fish before hot smoking over Oak from Thetford. We supply the fish in twin vacuum packs so you can use or freeze as required. Our smoked Trout is soft and delicate in flavour and there may be a few fine bones but we do try to remove as many as possible. This is a lovely fish served warm or cold and sometimes with a little horseradish and more often with a squeeze of Lemon and cracked black pepper. If you want to use it as a base for a fresh Trout Pate, remove the skin, add a little Creme Fraiche (or cream) small amount of cream cheese, some black pepper and lemon and or lime juice and zest, whisk to a fine smooth texture and tell your friends you caught the fish while on a recent trip to Lincolnshire.
