We'll try and set the scene. It's always difficult purchasing something on a whim when you haven't tried before you buy.
This wine has been made with the Champagne drinker in mind, or at least for those of you know what Champagne tastes like. Not many people have tried an English Sparkling Wine. You should, they're great!
Our upcoming limited release of only 1000 bottles has been ageing in the cellars, "sur lie" (that's on the dead yeast cells to you and me), for 51 months. This imparts more savoury characteristics along the lines of bread dough/ fresh pastry and toast. You'll find a good hit of this in there. This is interwoven with lovely fresh lemon, pear and green apples. There is a nice dollop of honey lingering at the end as well.
On the palate, the wine is voluminous. You can feel it in your mouth, a bit weightier because of the ageing. Not unpleasant by any means as the acidity is beautiful and fresh and cuts through this "fatness" in your mouth. A very refreshing and moreish drink.
Serve slightly warmer than you would for a white/sparkling 10-12C. This drinks well on its own and but can hold its own against many food types. Choose what you like, that's the best way to enjoy it! Classic pairings are with cheeses and charcuterie and other salty nibbles.
This wine will age nicely for the next 3-5 years when stored in good conditions. Beyond that, I doubt we'll ever know ;)
