To prepare the vegetable, peel and chop the onion, clean and chop the mushrooms into small pieces. Lightly brown the onion in hot oil, add the breadcrumbs and fry, add the mushrooms and cook briefly. When the mixture is cool stir in the egg yolk and season to taste with salt and pepper.
Season the slices of beef and brush with mustard, spread the mushroom and mixture onto the beef and roll up securing with toothpicks and twine. Dice the bacon and in a braising pan cook until transparent, add the beef rolls, brown all over and dust lightly with flour. Add the red wine and a little water , add the bay leaf and allow to braise for 1 hour. Remove the bay leaf mix the sauce with the sour cream and pour over the beef rolls.
Serve hot.
