Clean the leeks by cutting off the roots and removing the outer leaves. Cut in 5cm/2in lengths. Cook in boiling water for about 1/2 hour. Drain well.
Make a sauce of the butter, flour, and milk. Add the vinegar and salt. Simmer the leeks in the sauce for about 10 minutes
