Clean, pare and dice the celery roots, core and dice the apples. Combine all the ingredients and lightly toss. Chill for several hours before serving.
For the celery vinegar boil the ingredients together for 3 minutes and pour the mixture into sterilised glass bottles, seal and allow to sit for 4 weeks. Strain and decant.
Serves 4 persons
4 celery roots
3 apples
salt and pepper
1/2 cup olive oil
1/3 cup celery vinegar
For the celery vinegar:
Quart white vinegar
10 peppercorns
1tsp salt
4 cups young celery roots
