Sift the flour and salt in a basin. Break in the eggs and beat together.
Gradually add the milk until a smooth batter is made. Set aside for about 1 hour.
When ready to use, beat the batter again and add the flavouring.
Put a little frying oil into a thick pan so that it is just coated. Put in 1tablespoon of batter at a time and fry on both sides until golden and crisp. Dredge with granulated sugar before serving.
4tbsp flour
pinch of salt
3 eggs
1cup milk 1/2pt/280ml
vanilla, grated lemon rind, cinnamon, nutmeg or other flavouring
a little oil
