Bring the honey to the boil, add the sugar and cook again before removing to cool. Dissolve the potash in the Kirsch and add to the honey-sugar mixture. Chop the almonds and the candied orange and lemon peel and add them and the spices to the flour. Gradually add the flour to the honey mixture and knead the dough. Let the dough rest overnight.
Preheat the oven to 200°C, gas mark 6, 400°F. Roll out the dough and place it on a buttered baking sheet. Bake for about 20 minutes, allow to cool, then cut into small squares.
