Divide the lobster into fine flakes. Lightly beat the eggs and add gradually to the flour. Season with salt and cayenne and stir in the lobster.
Heat the oil. Drop in the mixture a tablespoonful at a time and fry until crisp and golden brown.
Drain well and pile on a dish. Serve immediately.
