Prepare the dressing in a medium bowl. Do this by mixing together the olive oil, lemon juice and freshly ground pepper. Slice the mushrooms finely, then add to the dressing and mix well to coat evenly.
Cover and leave to stand in a cool place for at least two hours. Just before serving, chop the anchovy fillets and stir into the mushrooms. Now check the seasoning and finally garnish the mushrooms with the chopped parsley.
6tbsp olive oil
2tbsp lemon juice
salt & freshly ground pepper
8oz firm button mushrooms 225g
8 anchovy fillets, soaked in milk (optional)
2tbsp chopped fresh parsley, to garnish
