Pancakes

The Mediterranean gave us our inspiration for the colours and flavours that make this fruit pancake for Shrove Tuesday so special. The melon, grape, apricot and strawberries and other three fruits are grown extensively in each of the six European countries bordering the Med. Of course if you canÕt get any of these fresh in your supermarket, you can substitute any of these with other exotic fruits.

Sift the flour and salt into a basin, make a well in the centre and break the eggs into this. Add a little of the milk and stir gradually. Incorporate the flour from the sides of the bowl, adding more milk as necessary to make a stiff batter consistency. Beat the mixture well for 5 minutes then add the remainder of the milk. Mix well, cover and leave for 30 minutes to rest then pour into a jug.

Find a small frying pan and melt a little of the fat, heat until just beginning to smoke. Quickly pour in enough batter to thinly coat the bottom of the pan, tilting so the batter runs over evenly. Cook over quite a high heat until the batter is set and browned on the underside. Make sure the sides of the pancake are loose and toss (or turn with a flat knife) and cook the other side.

Turn out onto a plate and flavour with a filling or topping of your choice.
