Make sure you buy two ripe melons. Cut them in half, long-ways, and scoop out the seeds from their centres. Cut each half of the melon into four even-sized wedge shapes. Cut the flesh across into bite sized slices.
Carefully roll up the eight slices of Parma ham and place two wedges of melon and two rolls of ham on each plate.
Coarsely grind some pepper over the ham just before serving.
