Wash the plums, cut them in half and remove the stones. Mix the fruit with the sugar, turn it into a 3cup/1 1/2pt/840ml pie dish and pour over the water.
Sift the flour and cinnamon into a bowl, add the oats and rub in the butter until evenly distributed. Stir in the sugar then turn the crumble onto the plums and spread it to the sides so that they are completely covered.
Bake the crumble at 180C, gas mark 4, 350F for 45-50 minutes or until the topping is golden brown and the fruit cooked.
1 1/2lb ripe plums 675g
2 1/2oz soft brown sugar 65g
1tbsp water
For the crumble:
1cup plain flour 4oz/100g
2oz rolled oats 50g
1/4cup soft brown sugar 2oz/50g
1/2tsp ground cinnamon
3oz butter 75g
