Lightly grease four good-size barquette or tartlet moulds and line thinly with the pastry. Prick the bottoms of the paste two or three times with a fork and cook in a hot oven at 230°C, gas mark 8, 450°F for 3-4 minutes or until the pastry is lightly set.
Remove from the oven and press the pastry down if it has tended to rise. Add the chopped ham and grated cheese.
Mix the egg, milk, salt and cayenne thoroughly and strain into the barquettes. Return to the oven at 200°C, gas mark6, 400°F and bake gently until nicely browned and set, approximately 15-20 minutes.

1/2cup milk 1/4pt/140ml
