Strawberry Dream


Wash the strawberries then discard the hulls. Reserve 4 strawberries for decoration then slice the rest in half.

Whip the cream in a bowl until slightly thickened – just floppy.

Carefully fold in the yogurt, vanilla extract and icing sugar.

Finally, fold in the strawberries.

Pile into a pretty serving bowl or in individual dishes or glasses.

Top with a strawberry and a mint sprig if you have one.

This recipe is perfect for feeding a crowd, just double or quadruple the recipe to make more servings.

1 lb/500g fresh strawberries

½ pint/250ml double cream

½ pint/250ml thick Greek yogurt

1 tsp vanilla extract

 2-3 tbsp sieved icing sugar
