Preheat the oven to 375F. Peel, half and core the pears, mix together the cookie crumbs with the butter, adding a few tablespoons of the white wine to moisten, stuff the cored centres of the pears and set them in a baking dish.
In a saucepan, heat together the sugar and white wine until the sugar has completely melted and pour this mixture into the bottom of the baking dish, place in the oven. Bake for 35-45 minutes or until the pears are fork tender, spooning the wine sauce over the pears occasionally while they cook taking, care not to over saturate the filling. Remove from the oven and either serve warm or at room temperature. Prepare the chocolate sauce by melting the chocolate with the cream over medium heat.
To assemble your dish, spoon the wine syrup over each pear, place a small scoop of vanilla ice cream on top of this and drizzle with chocolate syrup, sprinkle with the almonds and serve.

4tbs softened butter
1 cup white wine 8floz/225ml
1/2 cup sugar 4oz/100g
2oz dark chocolate 50g
2-3tbs cream
vanilla ice cream
toasted slivered almonds
