Thinly slice the onions; shred the peppers; skin the tomatoes, chop the flesh and discard the seeds.
Put a little lard into a frying pan and heat. Put in the onions and, a little later, the peppers and fry very gently.
When the onions and peppers are soft add the tomatoes, salt and pepper and continue cooking slowly until all are soft and somewhat blended together.
Separate the yolks from the whites of the eggs. Beat the egg yolks with 1tbsp water and pour them over the vegetables in the pan, stirring all the time.
Beat the egg whites to a snow and add them, a spoonful at a time, to the contents of the pan, stirring slowly and cooking gently all the time until set.
Serve with cold ham or similar meat.
