Walnut Cake

Beat the white part of the eggs stiff and add the sugar. Then add the beaten yolks, baking powder dissolved in brandy, lemon peel, ground clove, cinnamon, semolina and the walnuts.

Place the mixture in a greased baking tin and cook at 350°F/gas mark 4/180°C for an hour or until golden. As soon as the cake has cooled down a little, add the warm syrup.

5 eggs
1 cup of sugar 8oz/225g
1 small glass of brandy
1tsp baking powder
1tsp grated lemon peel 1tbsp ground cinnamon 1 ground clove 2 cups of fine semolina 1lb/450g
1 cup of roughly chopped walnuts 4oz/100g

Syrup:
2 cups of sugar 1lb/450g 1 cup of water 1/2pt/225ml
peel of 1 lemon
1 cinnamon stick
