Croydon local revives past restaurant flavours

A Croydon resident has brought back some of his family’s tastiest restaurant recipes from over 20 years ago. Peter’s family use to own both Ming Garden in Thornton Heath (1984-1992) and Delices d’ Orient (1989-2000) in Sanderstead. Since its closure due to retirement, its loyal customers said they haven’t managed to find the same flavours and dishes since. Peter Wong, from South Croydon, swapped his job as an Accountant in the City to revive his family recipes which stretches back to 70’s where his grandfather created the recipes and subsequently passed down to his dad and uncle. HOMAY is a new artisan company which produces Chinese sauces and pickles in small batches from Peter’s home kitchen in South Croydon. The fresh ingredients are sourced locally to support and maintain the vibrant Croydon community. Supported by his uncle and dad who are helping to make the sauces and pickles, Peter wants to bring back the delicious flavours of the past for a new generation to experience. Peter explained: “I come from a family of great cooks, my grandad, dad and uncle who worked in Hong Kong before moving to England permanently in the 70’s. I didn’t want the family recipes to be lost forever as that would be a big shame so HOMAY was born, to maintain some tradition in today’s fast changing and busy society. At the same time we want to support our community by making our sauces locally and source our fresh ingredients from our local markets to help us recreate our tasty authentic sauces.” HOMAY sauces are currently on offer on Big Barn, please visit the online store for purchases and more information.

Pioneering farmers Peter and Andrew Fairs, of Great Tey in Essex, have successfully grown the first ever crop of British chia. These tiny oil-rich seeds represent another step in Hodmedod's mission to increase the diversity of both British farming and British diets. We are delighted to be able to offer the first ever British chia seeds, grown by Peter and Andrew Fairs in Essex. Long-time agricultural innovators, the Fairs already grow a range of innovative crops for Hodmedod including quinoa, camelina and naked barley. Chia seeds are harvested from the Salvia hispanica plant, a member of the mint family originating in central America, where the seeds were a staple food in Aztec cultures, alongside beans and corn. Chia has become popular in the UK in recent years as a versatile, tasty and nutritious seed. Salvia hispanica was previously thought not to grow to maturity in the UK climate but Peter and Andrew Fairs have selected a strain that has ripened and yielded well on their Essex farm. The crop received no pesticides and both yield and quality far exceeded expectations - and the bumble bees loved it too! Chia seeds can also be sprinkled on salads, incorporated into bread doughs, or used to thicken smoothies, soups or stews. A tablespoon of chia seeds soaked for 15 minutes in 3 tablespoons of water works well as a vegan egg substitute in baking. Rich in protein across all the essential amino acids, fibre and Omega-3 fatty acids, chia seeds have a very low glycaemic index and provide a slow release of energy. They're a good source of micronutrients including calcium, magnesium and phosphorus.

With it becoming more important to know where your products are sourced and if they have been locally produced, 2018’s Dabbers Den Winner has been able to embrace this value for her business and brand. We are delighted to announce that the winner of Dabbers Den 2018 is The Weston Biltong Company Ltd. The Weston Biltong Company began as a hobby inspired by a family holiday to South Africa in 2008 founders Sheryl and Ryan Walker and their children. They began making 3kg of handmade South African dried meats per week for friends and family before establishing the business in May 2016, and has since expanded to drying over 500kg of meat for customers across Cheshire, Staffordshire and other parts of the UK. All the products are handmade using 100% British Beef which supports British Farmers across the UK. The Dabbers Den judges were extremely impressed with their presentation delivered by Sheryl and Ryan, demonstrating a strong customer base and high quality product, as well as Sheryl and her family’s hard work showcasing their product at Artisan Markets and Food Festivals across the UK. On receiving the news of their success Sheryl commented: “We are thrilled that the judges saw the potential in our small business and that we are very excited to receive their mentoring over the next twelve months as well as having the extra money to invest into the future of The Weston Biltong Company.” As first place winners, The Weston Biltong Company will receive a £5,000 cash prize, 12 months accountancy and business mentoring from Howard Worth Accountants, a Business Legal Health check by Poole Alcock Solicitors and a Council Master Class from Cheshire East Council which will help to support and grow the business. Martin Webb, a Partner at Howard Worth, said “Both Sheryl and Ryan demonstrated to us a business which has been built using enthusiasm, hard work and a product inspired by both British and African cultures. It was refreshing to see a family business continue to grow and we look forward to seeing how their future plans expand the business further.” There were also prizes for second and third place. Second place was awarded to Sarah Gilsenan with her business Krafty Kidz, a children’s craft company who offer activity mornings and events in Nantwich, designed to inspire young minds to make, create and have fun. Sarah will receive six months support and mentoring from Howard Worth Accountants and a free legal Business Health check from Poole Alcock Solicitors.

Growing Wasabi in Northern Ireland

The wasabi rhizome also known as wasabi root will be dispatched trimmed. Most rhizomes are approximately 20 g in weight up to 200 g and the weight will not affect taste. At Wasabi Crop we harvest the rhizomes, then prepare them for vacuum packing. We then freeze the vacuum-packed rhizomes for our customers to contain their freshness for grating. On receipt of your wasabi rhizome, remove it from the vacuum pack and wash it under the tap with cold running water. Then wrap the wasabi rhizome in a damp cheesecloth - which is provided - and place it in the fridge until further use. Please store the wasabi rhizome in an open glass container. The rhizome requires good air circulation and you should dampen the cheesecloth and rewrap the rhizome. This procedure should be repeated every 2-3 days. You can grate the wasabi rhizome on a Japanese sharkskin grater or simply just use a micro-grater or even the lower part of a cheese grater. This grating approach will provide a delicious wasabi paste. During the grating process, the rhizome cell walls break down to release the wasabi kick which generates a fresh, pungent, zingy hot flavour. The freshly frozen wasabi rhizome can be stored for up to 5 days. It is best to use the wasabi rhizome within 2 days on receipt in order to maintain its optimum favour! Wasabi is known as 'King of Herbs' and adds a distinct flavour and unusual pale green colour to food. It is particularly prevalent in Japanese cuisine. Interestingly wasabi - although hot in flavour - is refreshing in the aftertaste. Wasabi cultivation in Japan has continued for over a thousand years. Wasabi is a member of the Brassicaceae (Cruciferae) family of crops which mainly consist of brussels sprouts, broccoli, cauliflower, cabbage, watercress, bok choy, horseradish and the seeds of black mustard. Wasabi has a distinctive heat component which quickly dissipates in the mouth, leaving an extremely pleasant and mild sweet vegetable taste - with no burning sensation or unpleasant aftertaste. Wasabi adds an aesthetic and culinary appeal to various foodstuffs and is particularly popular in Japan. Today, real fresh wasabi is finding widespread use in Western cuisine especially with its ability to convert an ordinary dish to an extra special one with a unique flavour and compelling taste. Key Features • Wasabi Rhizomes are part of the Brassica family and are grown in County Armagh, Northern Ireland. They take two years to mature and are known as ‘King of the Herbs.’ • Wasabi is a hot and tasty herb full of zinginess and refreshing flavour and will deliver a clean heat to refresh your sinuses. • Wasabi is famous in Japanese cuisine as an accompaniment to sushi and sashimi. It is also used in noodle dishes, gremolata on steak and mashed potatoes including wasabi mayonnaise, deviled eggs and glazed salmon. • Most commercially available wasabi is processed and contains minuscule amounts of real wasabi. • Wasabi Crop is able to supply freshly frozen rhizomes to order at your own convenience. • The wasabi rhizome can be grated for absolute freshness to produce the peppery hit with your favourite food. • Wasabi rhizomes are packed full of essential vitamins and minerals and is a real root-to-stem crop you can enjoy. Note: During the preparation, the wasabi rhizome is trimmed by removing the crown and the root tip to ensure that you receive all the rhizome to enjoy! • Your wasabi rhizome took over 2 years to grow in Northern Ireland. Yes, you heard right was grown in Northern Ireland, and Wasabi Crop is the first Company to achieve this on the Island of Ireland. • Most people have never tasted real wasabi but have been consuming FAKE WASABI which comes out of a plastic tube. What you have eaten is common horseradish with a little green food colouring and mustard. • Why is it so rare? Wasabi is a temperamental crop requiring difficult conditions and care to flourish. It is also somewhat perishable. Therefore, real wasabi can be extremely hard to get your hands on!
