Kohlrabi has a crisp, fresh taste and with a few aromatics added to the pickling liquid, it has a sharper bite, rather like kimchi. You can fold it in coleslaw or add it to salads for a burst of sharpness. Or you can add it to wraps and sandwiches for a bit of crunch and zing. You can warm it and serve it as a side dish with sausages and mash or grilled pork chops, like sauerkraut. Or you can throw it into stir-fries or noodles at the last minute.
