Casseroled Rhubarb

Soak the sago in 1/2 inch of water in a casserole dish for half an hour
wash and dry the rhubarb and cut into peices 1 inch long
Place in the casserole dish with the sago, sugar and lemon rind
cover with a lid and bake very slowly (low heat) for ahalf an hour
Cool and serve
