Peel and boil potatoes until cooked. Simmer the spring onions in milk for about 5 minutes.
Strain potatoes and mash. Add the hot milk, scallions, salt, pepper, half the butter and mix well. Serve hot.

225g scallions 1/2lb
1 cup milk 1/2pt/225ml
2tsp salt
1/2 cup butter 4oz/100g
