Dip the sole in seasoned flour.
Put the butter and cooking oil in the frying pan and when they have melted and are sizzling in goes the fish. Fry them for about 3 minutes per side, or more according to how big they are.
Then flip them onto a plate and melt a little more butter in the frying pan.
Squeeze a bit of lemon into it, this is very important, it does a lot to the flavour. Pour this over the fish.
Now knock up a salad on a side plate and eat with a little brown bread and butter.
