Line a greased flan tin with shortcrust pastry, you can use ready made but if you want to be adventurous make your own.
Halve the plums and remove the stones. Combine the caster sugar, egg yolks, mixed spice and soured cream and whisk together. Pour into the flan case and arrange the plums over the top, with the flat side facing up.
Put the flan into a preheated oven (200C/ 400F/ Gas Mark 6) and bake for 20 minutes.
Once the flan is done, mix the cinnamon with the demerara sugar and cover the top. Bake for another 20 minutes, but for the last 5 minutes, turn the heat up to 230C/ 450F/ Gas Mark 8 to brown the top.
