Sauteed Chicken Breasts with Cheese

Have the chicken breasts split in half and boned. Remove and discard the skin. Season the flour with nutmeg, salt and pepper.

Dredge the breasts lightly in the flour mixture, then in the eggs, then in a mixture of breadcrumbs and Swiss cheese. Brown on all sides in the melted butter.

Serve hot with lemon wedges.

1/4tsp grated nutmeg
salt & freshly ground black pepper
2 eggs, lightly beaten
3/4cup breadcrumbs 1 1/2oz/40g
1/4cup grated Swiss cheese
1/3cup melted butter 3floz/100ml
4 lemon wedges
