Melt the fat and add the fish fillets, alternating in layers with the onion and other seasonings.
Cover and cook very gently for 15 minutes or until tender, turning the fish once, with great care. Add water only if absolutely necessary. Shake the pan now and then.
Bring to the table in the same pot, garnished with lemon wedges and a side dish of boiled or fried potatoes.
1 1/2lb filleted fresh tuna (or halibut if tuna unavailable) 675g
1 large onion, chopped
2 cloves garlic, chopped
1/2cup lard or a mixture of butter and lard 4oz/100g
3tbsp chopped parsley
salt & pepper
